In 1821, Thomas Helliwell established one of Canada’s first breweries at Todmorden Mills. Their friend, beer historian Jordan St. John, has attempted to recreate their long-forgotten Old Ale recipe from meticulous diaries kept by the brewery that have survived the centuries. They then aged this beer in a Château Lafite Rothschild Sauternes Barrel for two years.
